From cafés to canteens, restaurants and small businesses, food storage containers are always a sort-after kitchen essential. For most of us working in the food service industry, gastronorms (often abbreviated to GN) are an integral part of our food storage facilities. Multi-purpose and economical, gastronorms are a prominent feature throughout every stage of food preparation cooking and service because of their robust, adaptable and long-lasting qualities!

Specified in the EN 631 standards, these tough food storage containers are the very best way of keeping food neatly prepared, fresh, uncontaminated, at the correct temperature, and various other essential requirements that your kitchen needs on a day-to-day basis.


Often made from a durable stainless-steel, porcelain, polypropylene or polycarbonate (a strong and tough thermoplastic polymer), the materials which gastronorms are commonly made from can be chosen depending on their preferred purpose. This means that these hard-wearing food storage containers can either be a densely coloured material, like black or metallic, or visually transparent which can provide effortless access to the correct product without any searching within even a very dense kitchen-space.

Both stainless-steel and polycarbonate are known for their durability, which means that gastronorms are not easily scratched, scraped or even punctured with metal kitchen utensils. Depending on the thickness of your chosen material, with gauge 22 being the most used thickness in the food service industry, gastronorms can vary in cost. Consequently, thicker materials can be more expensive than thinner materials.

As a result of this differing thickness gauge, some thicker gastronorms may also require more heat to be as effective as thinner gastronorms. Although this once again depends on the purpose of your chosen gastronorm.

All of the materials listed above are able to be cleaned easily either by hand or by commercial dishwashers, with only a minimum amount of scrubbing necessary for even the toughest of cooked foods.


These specialised food storage containers are available in various interchangeable sizes, depths and capacities making them perfect for the individual needs of your business. Providing efficient and effective placement beside one another, gastronorms can be positioned neatly together in your individual racking setups. This provides an accessible and space-saving food storage area. 

Available in a wide variety of different sized and depths, gastronorms can be removed and replaced with new sized containers depending on what the individual requirements of the containers are. A full-sized gastronorm (abbreviated to GN 1/1) is 530mm diameter by 325mm width. However, these sizes can be purchased in halves, quarters or even thirds with all sizes of gastronorms consisting of GN2/1, GN1/1, GN2/3, GN1/2, GN1/3, GN1/4, GN1/6 and GN1/9. 

The depths of each gastronorm can also be chosen depending on their purpose with the wide variety of depths consisting of 10mm, 20mm, 40mm, 65mm, 100mm, 150mm and 200mm. 

This means that these handy food storage containers can be chosen on an individual basis depending on the unique situations and needs of the business. However, accessories like separator bars, system dividers, frames and portioners can also be purchased to make the process of choosing individual containers easier.


In kitchen spaces, the neat and easily accessible storage of food storage containers can be tricky. Often, trays and containers are piled on top of each other, creating a hazardous tower of kitchen necessities, resulting in possible smashes, breakages or even health and safety issues.

However, gastronorms are unique in their effortlessly simple stackable qualities. Able to fit seamlessly into each other, even gastronorms with different depths can be stacked on top of each other with little or no wobbling and falling. With gastronorms that have a little more depth, the lids can also be simply placed portrait inside the containers, creating an uncomplicated and easily accessible compact storage. However, accessories like lid storage racks and wall fitting prep units can also be purchased to make this storage even more organised and neat. This makes gastronorms a wonderful addition for smaller kitchens which require even more orderly and precise storage areas.

Gastronorm Types

Gastronorms come in a variety of types which can be used for a multitude of purposes. As stated above, the materials and sizes can differ, but so can the purposes.

Coming in both solid and perforated styles, gastronorms perform a variety of tasks in the kitchen. 

Solid gastronorm trays can be used for cooking as well as cold and hot storage, although the size of the cooking trays need to be compatible with the oven size. However, these compatible pieces of electrical kitchen equipment can be easily purchased and they are specifically designed to hold gastronorm trays and other varieties of food storage equipment.

Although solid gastronorm trays have an assortment of uses in the kitchen, perforated gastronorms can also be purchased depending on your kitchen needs. These trays are specifically designed for drainage, but must always be used with a solid gastronorm tray or pan to collect the waste. 

Smaller perforated inserts for solid gastronorms can also be purchased for use in electrical kitchen equipment, like in chip scuttles. Also, wire grids and shelves are available, but again they must be compatible with your chosen oven size.

Gastronorm Containers

Food containers made from a translucent polycarbonate or polypropylene can be purchased with or without lids. 

These containers can have either coloured clips or coloured lids for coding contents. Taking away most of the sticker-dotting process, these lids and or clips are an efficient and cost-effective way of clearly making sure all foods are within date and therefore within food health and safety guidelines. 

Even allergen food containers are available in purple for both the lids and containers can be purchased to make the labeling of allergens obvious to all staff and therefore reduce the risk of contamination.

These gastronorm food containers are also easily stackable, durable and dishwasher safe. They are able to withstand temperatures of -40°C to +95°C. This means that these containers are not only able to be clearly and obviously labeled, but, like their durable stainless steel counterparts, are also able to withstand the day-to-day activities of a busy and productive kitchen.
